Grenache Carignan Syrah
This wine comes from vineyards located in the Languedoc-Roussillon wine region. The region basks in a hot, dry climate which promotes development of aroma in the grapes during the ripening phase, producing expressive wines.
The vines are trained using the Cordon de Royat system for the Syrah and Carignan whilst the Grenache is trained as bush vines. Part of the vineyard is irrigated in response to the water stress the vines undergo. The vineyard is organically managed and certified.
The crop is destemmed before vatting. Some is fermented using short macerations at temperatures ranging between 24 and 26°C. The rest is fermented at higher temperatures (26 – 28°C) with longer pomace-contact maceration (15 to 18 days depending on the quality). The resultant blend adds complexity, fruitiness and spice to the wine.
Works with ratatouille or as a partner for cold cuts. Ideal for cold starters.
The colour is intense red with purple highlights. The nose is complex, with notes of black fruit and sweet spices. The structure is supple, the tannins fine and soft. This is a palatable, indulgent wine.
