La Folie Saint Auriol Syrah Rosé

The grapes are vinified in our style, for a typical Corbières. The profile of these single-variety wines is thus quite concentrated, the tannins being on the ample side, and the mouth full. The Chardonnay is enriched with some oaking, and the fullness of the Merlot results from frequent pumping-over during winemaking. The name Saint Auriol appeared in the 19th century with the construction on the property of a chapel dedicated to this saint. The Occitan name is "Fontauriol" (Fountain of Gold) - gold and iron being present in the area.

The vineyards are located on the upper tiers bordering the Mediterranean shoreline in the Minervois. They enjoy a hot, dry climate mitigated by moderate elevation (150 to 200m) which promotes the development of aromas in the grapes during ripening, producing a range of perfumed wines showing abundant finesse.
The vines are trained on wires and harvested by machine or by hand for some of the rigorously selected vineyards. Yields total 70hl/ha.
The fruit is harvested by machine or by hand based on strict vineyard selection, taking into account the ripeness of each plot. The grapes are entirely destemmed before fermentation. The wines are fermented in stainless steel tanks with particular attention paid to temperatures during fermentation and to pumping over which is designed to produce fine tannins and good fruitiness.
Works best with spring salads and cold meats.
A full-flavored wine that tastes of fresh fruit.
