Lâchez Les Fauves - Féroce Rouge
IGP Pays d'Oc
The national media, including "Le Monde", dubbed Jean Vialade, the charismatic leader of the Occitan movement and promoter of organic winegrowing in the mid-1970s, "The Lion of the Corbières". The iconic brand, encompassing three wines for pleasure, conveys a very symbolic message - "Lachez Les Fauves or "Unleashing the Beast". Launched in June 2020, its success outmanoeuvred lockdown. Féroce shows a brilliant ruby hue which gives the wine real allure. The palate is crisp and flavourful. The aromas deliver a merry-go-round of red fruits.
Grenache Merlot
15°C
Clay-limestone soils.
The vines are trained using the fan system for the Merlot and Cordon de Royat for the Grenache.
Harvesting takes place early in the morning to preserve fruitiness. The grapes are destemmed and put into tanks. Alcoholic fermentation starts quickly, around 25°C, then the temperatures are lowered to around 20°C to preserve aroma. French oak staves are added during malolactic fermentation.
The "ferocious" red wine shows at its best with white meats in a sauce, rabbit casserole or even grilled red meats. It can also be savoured with a platter of cold meats or strongly-flavoured cheeses such as Bleu des Causses.
Deep purple, blackcurrant aromas with vanilla-like notes. The palate is rounded and lingering. The Merlot and the Grenache combine to produce a red wine that shows expression and is mouth-filling and complex.
