Cicéron is a protected eco-system, dedicated to wine-tourism for connoisseurs. The vineyard is experimental, created by taking into consideration the sustainable economy, global warming and the protection of the planet with its diminishing water resources. This wine is the realisation of an idea, for sure: a reality which the world of tomorrow is realising today in every single action we take.
Grenache
This vineyard is located on the high terraces of the Corbières in Ribaute. It benefits from a Mediterranean climate, where the daytime heat is balanced by night-time coolness due to its average elevation. This promotes aroma development of the grapes during ripening, producing a range of concentrated wines, while maintaining acidity-driven balance. The Grenache vines are planted on marl soils.
The greatest care is taken in managing the vineyard and health of the fruit. The vines are pruned using the ‘palmette’ or fan system to allow good distribution of the clusters on the vine stock.
The grapes are harvested at optimal maturity. After the harvest, the grapes are put in vats for a traditional vinification. The maceration is long, it lasts about 3 to 4 weeks. The temperature is regularly controlled. The ageing in vats lasts about 9 months.
The perfect accompaniment for a nice pork or beef rib, or a rack of pork cooked at low temperature.
Beautiful robe with garnet reflections. An intense nose where aromas of red fruits, slightly spicy and toasted, with mocha notes are mixed. The mouth is rich, ample and greedy. To drink now, the wine can also evolve in time (4-5 years).
