It is customary for the Cellar Master to vinify his « vat », a thirst-quenching and friendly wine, supple in the mouth and still fruity. A wine which « please to the soul ». Olivier, the Cellar Master appears on the label, which refers to "L’Art de Vivre du Sud” (the Southern Life style): Vines and Wine, Sea and Sun, Work and Relax. The charcoal colored painting represent the vineyard on the hillsides, overlooking to the Mediterranean sea. The atmosphere is relaxed: the wine is made, the bottles are on the boat, Maître Olivier enjoy this peaceful.

This wine comes from two vineyards with very different climates. Some of the wines come from the Gers wine region where the cool, rainy climate produces extremely fresh wines. The remaining share of the wines come from the Mediterranean coastline, around Béziers, where the climate is hot and dry, producing lush, complex wines.
A great deal of importance is given to vineyard management. Two types of pruning are used, Cordon de Royat and Guyot.
The grapes are harvested by machine by night to take advantage of the cool, night time temperatures. They are then destemmed and undergo short maceration. The juice is clarified at low temperatures (7°C). Temperatures are regularly checked during fermentation. A small amount of yeast can be added at the start of fermentation, to maximise development of aroma. Shortly before bottling, the Gers and Languedoc wines are blended in proportions based on tasting results. The wines from Gers add freshness and citrus notes, whilst the Languedoc wines impart volume on the palate and tropical fruit flavours.
Can be served chilled as an aperitif but also makes the ideal partner for fish or seafood, as well as white meats and pasta with a cream sauce.
Beautiful brilliant yellow. Lovely nose of white-fleshed fruits, citrus, tropical fruits and honey. The palate is fresh on the attack with volume on the palate along with pear, lemon and white peach aromas. Drink preferably in the year following bottling.
