Belles du Sud is the anchorage, the bedrock of today's Auriol company. The majestic Fontaine des Trois Grâces adorns the Place de L'Oeuf in Montpellier. The refreshing fountain is decorated with Roman nudes, their shoulders bearing symbols of opulence: baskets of grapes and amphora. You will find such fountains in all the towns of the Mediterranean perimeter: it is a typical characteristic of local architecture. These should remind you of our values and the symbolic corpus of our history: the Mediterranean identity, the Roman impact on the civilization of Wine, wine as an integral part of our culture and economy. Wine as Art, or failing that, the Art of Living!
Chardonnay

The vineyards are located in the Corbières. They enjoy a dry, hot climate which promotes development of aromas in the grapes during ripening, producing a range of wines with varied profiles.
The greatest care is taken with vineyard maangement and the health of the fruit. The vines are trained using the Guyot system. Irrigation allows ripening to be managed and promotes balance in the wines.
The grapes are harvested by machine by night so as to benefit from cool night-time temperatures. They are then destemmed followed by short skin contact maceration. Clarification of the juice is done at low temperatures (7°C). Temperatures are regularly checked during fermentation and a small amount of yeast can be added at the start of fermentation to maximise development of aroma.
Works well as an aperitif served well-chilled and also makes the perfect partner for fish and seafood, as well as white meats and pasta in a cream sauce.
Beautiful brillant yellow. Inviting nose of white-fleshed fruits and citrus with floral notes. The palate is lively on the attack with aromas of pear and white peach, capped off with a mouth-filling finish. Drink preferably within the first 2 years after bottling.
