To choose a vegan wine is to commit oneself to a more harmonious and respectful world. If going Vegan is an act of attentiveness to those concerned about their protection and well being, it is also an altruistic world view which takes account of Life in its totality, and which respects and defends it in all its forms. Our company has vegan certification, this being an approach we have initiated which involves all our suppliers and collaborators. This designation is recognised at the European level and is granted by European Vegetarian Union. This is a recent initiative which dates from 2017. We hope to explore alternative models, incite interest in and questioning about our environment. We are responding to the expectations legitimate of consumers, thus completing our historic organic and bio dynamic offer, initiated as of 1970 by our patriarch Jean Vialade. We guarantee that no additive used in the chain of production of these "Vegan" wines has been tested on animals. in the vineyard: treatment of leaves and grapes, fertiliser, protective plastic for young vines at the bottling: ink on capsules and labels, glue, ink on the boxes... The wine is free of such products as finings made from fish or egg whites, traditionally used in the clarification and binding of wines.

Vineyard situated on slopes above the Mediterranean coastline in the Azille area of Minervois territory. The vine plots are to be found on rolling North-facing uplands benefitting from a hot, dry climate, nevertheless tempered by their 150-200 meters above sea-level: this favors the development of aromas in the ripening grapes and an opportunity to elaborate a range of fragrant wines of great finesse.
Trained along wires, the vines are harvested by machine, or by hand for certain specially selected plots. Yield is at 70 hl/ha
Machine- and manually harvested plots selected according to terroir and relative ripeness. The bunches are completely destemmed before being put to ferment in stainless steel vats: particular attention is paid to controlling fermentation temperatures and pumping-over, with a view to obtaining concentration and aromatic qualities typical of this grape-variety when grown in a Mediterranean climate.
Highly recommended with chicken, in a morel sauce, or roasted with potatoes à la dauphinoise ; also, with mild cheese or chocolatey desserts. Equally good on its own, as an aperitif, or with a good book, or chatting amongst friends.
Deep in color, with aromas of blackcurrant and gingerbread. Rounded and supple in the mouth. A refined, elegant wine. To be drunk preferably in the early years after bottling, it evolves nicely over the course of 3-4 years.
