It is customary for the Cellar Master to vinify his « vat », a thirst-quenching and friendly wine, supple in the mouth and still fruity. A wine which « please to the soul ». Olivier, the Cellar Master appears on the label, which refers to "L’Art de Vivre du Sud” (the Southern Life style): Vines and Wine, Sea and Sun, Work and Relax. The charcoal colored painting represent the vineyard on the hillsides, overlooking to the Mediterranean sea. The atmosphere is relaxed: the wine is made, the bottles are on the boat, Maître Olivier enjoy this peaceful.

The vineyards are located on the upper terraces bordering the Mediterranean coastline, between Béziers and Montpellier. The climate is Mediterranean, hot and dry, which promotes development of aroma in the grapes during ripening, producing a range of wines with differing profiles.
The utmost care is taken with vineyard management and the health of the fruit. Two types of pruning are used – Cordon de Royat and Guyot.
The fruit is picked by machine based on strict vineyard selection, taking into account the ripeness of each plot. The grapes are entirely destemmed before fermentation which takes place in stainless steel tanks with particular attention paid to fermentation temperatures (20°C - 25°C). Daily pumping over is used to produce fine tannins and good fruitiness.
Perfect as a partner for smoked cold cuts, roast and grilled meats, oven-baked vegetables and mild cheeses. It can also be enjoyed on its own, whilst reading a good book or chatting amongst friends.
Garnet with purple-blue tints. Nose of ripe cherries and strawberries, plums and spices. Enjoyable on the palate with soft tannins. Drink preferably in the first few years after bottling. Will mature well for 3 to 4 years.
